THE DISTILLERY

Everything created on-site is small batch, made by hand in true Artisanal style!

Our approach to distilling stems from decades spent in fine dining establishments; sourcing quality Australian produce, using what’s in season & to season lightly.

We love connecting with farms & producers directly to find Australian grown. We both are passionate about the land, which has not only come from the influence of our career choice but our families who grow what they can. We happily use fruits, herbs and flowers directly from our gardens.

Our aim is to produce a range of small batch beverages from what we can source from within a day’s drive. Some batches are so small they are only served behind the bar and found in our cocktails for a limited time.

Classic Gin

Our take on a London Dry Style, big juniper notes are balanced with coriander and angelica. Aromatic on the nose, rich palate with a gentle finish from the lavender flowers we grow in our gardens.

Citrus Gin

A contemporary style gin, using NSW blood oranges. Juniper notes are quite soft, resulting in a delicate and floral gin that captures the elements of a citrus through the distillation process.

Navy Gin

Being a stones throw from a Historic Naval Base inspired us to create this Navy style gin. As an overproof it allows a different approach to gin flavours, big, bold junipers notes are complimented by a strong finish from bronze fennel grown in our gardens. This is a much more of a savoury palate gin.

Vodka

Grain grown in the Riverina is used to make our vodka. Using a winter wheat, this vodka is entirely made from scratch; cracking, the wash, fermenting to distilling on site. During the fermentation process we are overwhelmed with cooked green apples and buttery vanilla smells. We have kept these aspects in the vodka to give it a unique character. Velvety and delightfully smooth.

Limoncello

Growing up surrounded by Italian families, we wanted to create a lemon liqueur that pays respect to them. Using a rarer ancient recipe, our limoncello remains clear, its vibrant with lemon flavours and doesn’t finish too sweet. Sitting at little higher in alcohol, this stored perfectly well in a freezer!

Strawberry

Our first liqueur using on of our favourite fruits. Capturing all the beauty of what a strawberry is; extracting colour, flavour and aroma. We create these liqueurs using only Australian fruits and work closely with farmers,

Marionberry

This fruit was cultivated back in the 1950’s and is part of the blackberry family. However, it’s characteristics are far more complex, intense and far less tart than the common blackberry. The marionberry is not commercially grown in Australian and we source these berries direct from small NSW farms.  

Real Fruit Seltzers

Made with real fruit, we produce a range of seasonal seltzers that showcase fruit & flowers natural flavours. We allow natural sugars to be left behind to create our unique style of seltzer. We create our seltzers, just like the rest of our products, free from additives, flavours, colours etc. Every batch is unique as we simply are showcasing the season. Some of our seasonal flavours found on tap include:

Craft Beers

Proudly using Australian grown & malted barley from Voyager Malts found in the NSW Riverina. We have created a small list of craft beers that are enjoyable as a table beer with a meal or simply enjoyed alone. Our list includes some Old Salt staples and seasonal releases:

Camperdown Cold:

A light coloured beer designed to be easy drinking with a crisp finish

Belgium Pale Ale:

Influenced by a Belgium style beer, its smooth, malty with little bitterness

IPA:

American West Coast IPA, well bodied with tropical aromas from Australian & US hops.

Old Boy Lager:

A malt driven Australian lager, complex with big malt flavour.

Seasonal Fruit Sour:

Berliner Weiss, left to sour in the kettle and finished with seasonal fruit providing its natural colour & flavour.

Milk Chocolate Stout:

Served on nitro, smooth, creamy with a chocolate finish.

We are beginning an exciting chapter as we slowly add our craft beers into convenient take-home formats!

Non-alcoholic

In addition to all the alcoholic beverages we produce a small variety of non alcoholic sodas. We love rediscovering classic recipes from yesteryear and produce our own gingerbeer, tonic and lemon squash. We also enjoy experimenting with other forms of fermentation by brewing our own kombucha and creating new soda flavours.

We have created our own tonic to compliment premium Gins

A fresh way to enjoy a Gin & Tonic. Our tonic has robust citrus notes with a low bitter finish – a contemporary style mixer that allows you to enjoy the flavour profiles of your gin.

We believe it’s a far more refreshing way to enjoy a G&T. It’s enjoyable on it’s own or with handful of berries served over ice!!
